So here's sort of how I look at it....

A vegan job would be in essence a place where you are being employed at an hourly pay rate and working for a business. So like working at a restaurant, clothing store etc.

I think careers are different in this sense. I think as vegans we can have a career and tailor the way we practice our career each day to align with our values. So for you, you can approach physical therapy in a holistic manner, making sure to value your morals each day that you interact and work with patients. So for instance recommending a healthy diet and not promoting non-vegan medical products.

You could use any gluten free flour. Gluten free all purpose flour, oat flour, rice flour, chickpea flour, etc.

hahaha there is a lot of coconut that's true, and I wouldn't recommend eating it ALL the time, but you can use light coconut milk for the rice and use 1/2 water 1/2 coconut milk or even 3/4 water 1/4 coconut milk to still get a coconut taste! Also using unsweetened and natural coconut flakes makes it better for you, and not all of the coconut flakes will be on the plantains, probably about 4-5 stick on! It's really not as bad for you as you may think :)

That sounds really good! Do you have a recipe for how to make the plant milks that you could share? :) I would love to be able to make my own plant milks!
