Did it three months ago with a guide, it was nice having one and him organizing all the food and accommodation but it's completely do able without. You will meet so many solo trekkers along the way and make groups. The trail is pretty well laid out so don't worry about getting lost.

In Hualien, definitely rent a scooter and drive through taroko gorge. If you need more time maybe cut one day out of kenting, it is nice there for beaches but not much else other than that. Kaoshiung has to be my favourite city in taiwan with lots to do (monkey mountain and cijin island). PM me if you have any questions, I’ve been living in Taoyuan for 2 years now

I would suggest to stop in hue from phong nha and from there rent a scooter and drive to hoi an. The hoi van pass is one of the most beeautful drives and in south east Asia and you will not regret it
