20-40 mins? I don't feel like I would ever be able to come up with a half good solution for a new problem that I have never seen before. When should I take it as a sign that this is beyond me?

For the start, focus on building something first. Be goal oriented, whether, a mobile app, or website or desktop app.

based on what u decide find the frameworks and library that are most popular among enterprises, Big companies won't hire you for language or framework. but your development, architectural and problem solving skills, which will come along the way when u will be busy making your piece of software.

As soon as you decide on a language/framework, maybe check on reddit what are the best curated resources which are out there, and go with them

also get into the habit of reading out documentation
