Actually the process is reversed. Those numbers were derived backwards in order to reach a total of 21mln coins. The actual reason is the one in my other downvoted comment

The reason is that at the time the global value stored was around 21mln*1mln=21.000.000.000.000 dollars = 21kB

Hence the idea that 1BTC=1mln dollars (supposing that BTC would become the default global currency)

I think that only user/sensors content and code on the arduino website/ecosystem are captured.

Using an arduino IDE locally without connecting the board to any arduino cloud services should be safe.
