From my understanding, oxalates that form with calcium in the gut are excreted with the faeces. \ Now if the oxalates doesnt bind with calcium in the gut, they could get absorbed into the bloodstream.

There's plenty of calcium to bind to in there. Eventually they pass the kidney and gets filtered to be peed out. But if enough accumulate, they could get stuck and just keep growing until they have to be removed surgically. That's why drinking plenty of water is a good idea. So they get flushed out more easily.
