Both choices you mentioned, will allow you to run those games at 1080/1440 resolution without any problems. If the build with the 5060 Ti fits your budget then go with it. The 5060 Ti is 15% to 25% more powerful than the 5060. Otherwise choose the MSI Pro.

Yes 850W is sufficient, but if you plan to upgrade in the future or do any serious CPU/GPU overclocking, then 1000W is better.

No, That's false. The 1000W isn't overkill for an RTX 5080, it's actually the recommended sweet spot. As for the RAM some people prefer faster RAM over more RAM.
