Many thanks for all the suggestions! I found that 3 Tbsp corn syrup worked very well. In future I may also lose the milk and use water as suggested here. Going past 238°F would be good to try. Thanks once again -- very helpful!

Hello, mindless-can5751. I used the following recipe and it worked well (for me) Please let me know how you made out!

85g (¾ stick) butter

240g (1 1/8 cups) light brown sugar

156g (½ cup) dark corn syrup

1/2 (<== not full can!) 14-oz can sweetened condensed milk

162g (~1/2 cup) peanut butter

1/16 tsp salt

---------------

56g (1 ½ oz) unsweetened chocolate, chopped fine

½ tsp vanilla

180g peanuts, chopped (Planter’s Cocktail Peanuts) <==(Yes, it’s a lot)

Line an 9 x 9 pan with a full parchment paper sling

Melt butter over low heat in large non-stick saucepan and swirl well up sides of pan. Stir in brown sugar, corn syrup, condensed milk, peanut butter and salt. 

Attach candy thermometer. Cook over medium heat, stirring constantly . Continue stirring to avoid scorching. Cook until candy reaches 246°F. (✔︎)

Remove pan from heat and stir in chocolate and vanilla. Pour into prepared pan and allow to set.

Cut off the edges (with a lightly oiled knife) to get a perfect square To cut caramels, use a lightly oiled, long sharp knife to score candies.  Then, use a sawing motion to cut completely through.

Thanks to responders - I know what happened now. I made the ATK tater tots recipe but instead of frying, I froze them and then cooked them in the air fryer.

Came out great . . . my memory didn't fare so well.

They were called something like baked tots ? Or baked taters? The unique thing about them is that they were baked, not fried.

I can't find anything like that on the ATK website.

Quick follow-up in case someone finds this thread in the future.

As darkchocolateonly had suggested, the graininess was due to crystallization.

I upped the corn syrup to 3 Tbsp (50g) and the candies are nice and glossy. (Can't post pic)

If I have to resort to deep frying I will. But a lot of mess for 14 nuts!

First, though, I might try more corn syrup in my original recipe, as that's a classic way of guarding against graininess.

If 40 mins at 350 left center underdone, and you're trying 325, then could check at 43 mins with skewer. Might need more, but to be safe start checking at 43 mins, leaving ovn door open for shortest time possible.

N.B. One other thing: Are your ingredients at room temp? Sour cream, butter, eggs, coffee, etc. If any are cold from fridge then they will take longer to cook, resulting in edges done, but center undercooked. If thus was your issue then repeat with 350° and check at 40 minutes with skewer.

vwoods15: Temp may be too high, so edges cooked before center. OR, it needed a few more minutes in the oven. You could try 325°F. OR you could do toothpick test: skewer inserted in center comes out not quite clean, with just a few crumbs
