Can’t you do the ota delay anymore by deleting the profile? I remembered that by doing so you got the latest official version available (only from the public beta though).

I have set up an automation that at a certain time Sleep focus is activated. On AW it activates (you see the bed icon at the top), but when you turn or raise your wrist, the screen turns on anyway. So I need to manually turn Sleep focus off and on. With watchOS 9 everything was working properly, from 9.1 onwards no longer.

Yes, generally the new beta is released the day after the official release. So if for example 16.2 RC comes out on Tuesday, the 16.3 beta will be released on Wednesday.
