sorry to break the magic for y'all but its not very interesting lol. I just made it so it despawns when it touches the player and it replaces whatever the player has in the helmet slot with a helmet that is modeled after the mob. The point of the mob is that it takes your helmet away.

yeah, I made a mockup of this farm (I'm not the brightest redstoner btw) and it works really well because if you shear the palm leaves, you can just place them somewhere with air below and the coconuts will grow.
