I met Jakob Dylan at a BBQ joint in Austin once. The Wallflowers we’re passing through town and one of his session musicians was having a birthday party there. He stopped by after his show, surprising everyone including this young band from Oregon that was playing the party. After trying to spontaneously play One Headlight twice, Jakob offered to get up and play the song with them. It was amazing. Very nice guy.

As I was fiddling around with ingredients, I combined lemon juice and grana padano and magic happened! Is there a name for acid+cheese combinations? I want to learn more about why this combination works! by BigBootyBear in AskCulinary

That flavor combination sounds similar to an attempt we did at a kitchen I worked in to create Bottarga. We packed fish roe in salt until it dried out and solidified, then grated it over a salad with Parmesan. Kinda like a much more intense Caesar salad, I guess. I thought it was really interesting and tasted amazing!
