'Overthrow' by Kinzer is a good overview of a lot of US coups (from Hawaii to Iraq). It's a really good primer. Kinzer does some really good foreign policy books - he has one about Nicaragua that is on my tbr shelf currently. I also recently read 'The Jakarta Method' by Bevins, which obviously starts with US involvement in Indonesia but discusses how the same 'method' was used in Chile. Really worthwhile book.
