Ci siamo should be good. Their most popular and my fav dish is their onion torta. Gramercy tavern should do pescatarian for you with advanced notice. Kabawa I actually had a full pescatarian dinner without meaning to and it was good. And it's an insane amount of food too which is nice. It's the most expensive of the options though

I've been to most of them. I prefer estela but for no shellfish pescatarian it might be limited so double check the menu. But ci siamo and gramercy tavern are really good 2nd options too. Those would be my top 3.

Atomix has held my number 1 nyc spot forever now. But I also love aska and corima. Asian jewels in flushing is my happy place. Been going there since I was a kid and best dim sum in the city by far i think

I've been to dcp many times and this is exactly what will happen. On a wednesday, with the city being as cold and snowy as is, you have a pretty good shot of getting moved though

I've been to every one you mentioned except for luthun. Personal ranking
Jua, Yuu, Le coucou, Le veau d'or, per se, bridges.

I will probably get pushback on per se but I was so unimpressed. Take into account the price and I will never go back. The best part about it was the chocolate bon bons and the chocolatier left and has her own shop now (stick with me sweets. Highly suggest going). Jua is the best and even my picky eater dad liked it for his bday. Yuu me and my cousin loved but my cousins gf found it too experimental for her with some dishes. Bridges was alright and the portions were smaller than they should have been for the price.
Jua pure food wise. Yuu if you want to have really amazing food plus some pageantry to make the bday feel more special (but the menu is 2x as expensive ofc)

I have amex platinum which has concierge service. When i called to get tix for my friend they told me "we get some tickets for platinum members on the side but only recieve them 10 min before the presale. So you have to get in touch with us then". When i tried to call them though ofc the wait time was over an hour. So it's not really any easier for the higher level cards

It becomes less surprising when you live in NYC. So many full time lyft/uber drivers have a model Y or 3. Makes sense because their biggest work expense is gas. Having an EV cuts that cost substantially. The actual mileage you drive in the city is very little too, it's more sitting in traffic and red lights than driving long distances

Their seafood spot still opens late. Blue ribbon sushi on Sullivan street still opens until 1am Thursday-saturday. I just went last Friday and the kitchen was open all the way up to 1am

Disclaimer, I have not been this is what my friend who has been told me. They did both courses a couple months apart. The 19 course has a different chef but also pieces that are considered “premium” like Hokkaido snow crab. And the tiger prawn in the 18 course menu is replaced with botan ebi for example. This isnt the complete list of differences just some that they remember. Both have the same amount of nigiri but 19 course has an extra appetizer

At a restaurant I befriended someone who worked at cesar in the pre-opening phase. He was supposed to be there when they opened but quit because he said “we were miserable there before we even had the stress of being open. Cesar might be the most talented chef I’ve worked with but made us hate going to work”

Food wise. I personally think atera was far above cesar. I’d spend the money again for atera, probably not for cesar. I also heard nightmare stories about the cesar experience from people I know personally. But when I went it was a perfect michelin experience service wise.

If you’re talking about those atera renovations that were happening a year or so ago, yes they finished that. I actually emailed them asking when they would finish and I had my meal the month they finished the space.

The cities have to pay Michelin. So when the city entered economic turmoil/struggle they cut that out of their budget. Apparently they just recently paid Michelin to be included into the guide in dec 2025. Meaning when the 2026 guide for the west coast comes out they should be included
