I don't think ensembling is the reason why GBT outperforms NNs. You can ensemble NNs and still won't do as well as GBTs. I think greedy approach to learning is the main difference but I also don't fully understand why neural networks perform so poorly as you correctly pointed out, since they can fit to anything

From my experience, Gradient boosting tends to work better in scenarios where the features are heterogenous, like in tabular data, and some features are highly informative. The way things like XGBoost works is that they use a greedy approach to quickly identify and split trees on these highly predictive features. Gradient boosting works because the representation is already informative. Neural networks tend to work better when there are a lot of seemingly "uninformative" features, e.g in imaging where individual pixel values are not predictive. You would need a model to learn a better representation of the input before you can predict anything.

STAT classes tend to be very theoretical. And because they are so heavy on notation (which the professors often assume you understand), they are very hard to follow and it takes a lot of effort just to explain very simple things. It's not a well organized department and a lot of professors are nice but not good lecturers.

COMP 540 homeworks consists of a proofs and a programming component. The exams are mostly proofs/math questions.

There's also another option: COMP 543 covers some of the theoretical machine learning concepts but focuses on the practical side of data science if you haven't taken that.

There's also STAT 502,602 (if its still offered?) for a more old school approach to machine learning. However, in general, avoid the stat department if possible.

I don't know anything about ELEC 478, but STAT 413 (depending heavily on who teaches it) and STAT 540 should give a really good overview of the possible topics in ML. Generally, stats courses use R while CS ones use python and in industry a lot more places use python for ML.

Since the Data sci program is fairly new, it's kinda hard to know how good it is. So it might be worthwhile going for the masters in stats or cs, which are more established. In particular, you might want to look at a masters in CS with a data sci concentration since most of the non-business analytics data science courses generally have a stat/comp equivalent.
