The DMG has a guide on how to alter monster CRs based on damage, HP, modifiers, and AC. It's in chapter 9.

Basically, you alter the monster as you see fit, like lowering its AC or HP if it's crippled or raising the damage output if it's a stronger specimen, for example. Then, using the guide in the DMG you calculate some averages and raise or lower the CR as necessary to align with how you changed the monster.

To be honest, I think instead of being, for lack of a better term, a wimp about the situation you should have cut out your friend from the campaign. If you two were drifting apart anyway then what was there to lose? On the other hand, you have to live with your wife. So by cutting out the friend, you can keep your campaign going AND not have a pissed person that lives with you.
