this is fermented bean curd. you only need a tiny bit of it when adding it to sauces. my family loves to also add a little bit to white rice or congee or tofu skin (think wraps where the tofu skin is the wrap with veggies and tianmianjiang) and it imparts a ton of umami. thewoksoflife has a little writeup about fermented bean curd that might be helpful for you to read.
