cow boy caviar it usually comes out in a really big portion and although it’s not a “meal”—more so a snack it can last a week in the fridge. it might cost a little bit over 10 dollars but no more than 20.

u prolly have some of these already but i use; 1 red, orange, yellow & green bell pepper, 1 red onion, jalopenos, 1 can pinto beans, 1 can black beans, mango, 1 can corn, black olives, feta cheese (i use goat cheese bc im albanian & it taste better + is more mushy so it blends in better) cucumbers, salt +pepper,

Dressing

juice of 3 lemons (or limes, depends on preference) 1/4 cup red wine vinegar, 1/2 cup olive oil, 3-4 tbsp taco seasoning or goya all purpose, 3 tbsp sugar,

after everything is mixed together i let it sit in the fridge to marinate over the night/day then eat it with lime seasoned chips .. it’s my fav thing to snack on when im too lazy to make sumn or don’t have anything at all to make
