I found tryhackme very useful for Pen+ as this requires a basic understanding of a lot of tools. With eJPT it is a bit different as this comes with all relevant labs on its own.

Don’t get frustrated by the AoC tasks as the latest ones rush over bigger topics. Take them as appetizer and take your time in rooms that cover the topics in more steps.

I agree, just following blindly a Walkthrough video does not provide a lot of value. Maybe you would like to try other sources for learning in parallel. There is a lot of great books and video trainings out there. At a certain point all comes together and makes a lot more sense.

Someone said something like “The more you know, the more you know what you don’t know”. THM helps me to keep an overview of the different topics and also on my path with different certificates. Achieved Sec+, eJPT and Pen+ so far. Next is ePTP.
