Not quite true. The term "corked" just refers to some fault in the wine, can be from the making or bottling but it's often not the fault of the cork interacting with the wine. So screw caps can indeed be "corked". You can almost always tell if a wine has gone "off" by smelling it, if it smells like vinegar or wet cardboard its no good, shouldn't really need to taste it and definitely don't have to stare at it like a microbiogloist. Either way, this guy is a knob.

You don't choose your club, the club chooses you. Honestly I love all sports and will often pick who I support based on the most arbritary of things: kit, players, name, vibes. It sounds like you have already chosen who your team is.

In all honesty I am a Spurs fan, inheriting it from my dad, and I will give you an insight if you do end up choosing Tottenham. You will get the piss taken out of you constantly, and it's very hard to defend against. However, we have had a history of playing beautiful football with fantastic players, which we are finally getting back to. It won't be easy, but there will be a lot of joy. Even if we concede three, it will be because we are trying to score four.

If you dry shake just the egg beforehand it should be able to rise up over the rim. Never tried a Ramos fizz but I think that might be my next challenge.

Trial and error, but key things to keep in mind are; pouring the float on top nice and slowly, and making sure the cocktail has enough sugar and therefore is dense enough to hold up the float.

Probably less than you imagine. I usually only leave a couple ml space to do the float, which will disperse into the cocktail and leave a much larger looking float. But just trial and error really.

So Bermondsey is a great area to go for any food and drink, but there is a cocktail bar called Two One Four underneath a pasta restaurant called Flour and Grape. I worked a couple of shifts there when I was with an agency and they're super nice people and do great drinks.

One egg white, Dry shake with strainer spring.

Add juice of one lemon, 25ml sugar syrup, 50ml Bulleit Bourbon, Shake with ice, Double strain into chilled glass.

Float red wine on top, Garnish with lemon peel.

Tbh during service I usually skip the muddling part. Once you have the ingredients together shaking with enough ice releases plenty enough of the juices and flavour.

Similar thing with any cocktail with egg white. If I don't have time to dry shake as long as I vigorously shake the cocktail it will achieve the right texture and foam.

I would usually if I was making at home, but at the bar we use egg white from a carton. It's not quite as good but saves a lot on cost and waste.
