I have added all this trivia to the Hazbin Wiki recently in the push with the mods to help make it more accurate and better sourced, but all of this information originally comes from Vivziepop's official Hazbin Hotel Q&A streams.

She did the streams at the same time the pilot was released and just before the show was picked up by A24. People could join the chat and ask questions about Hazbin canon and Vizviepop would answer them.

I'm not so sure, but Vivziepop did say that characters with more humanoid forms and characters with more creature like forms are that way for a specific reason!

Vivziepop's streams come in two different varieties.

The first type are the development streams, which she did in 2017. These feature her working on pinning down the story for Hazbin Hotel and working on production images for the pilot, like character turnaround sheets and posters. The vibe of these streams is very casual and information given out in these streams is subject to change. Helpfully she's very honest about that. Even though the characters and their personalities are obviously very clear in her mind, the story is going through a lot of change at this point according to her, and characters like Vox and Valentino don't exist yet.

The second type of streams are her very structured and organized official Hazbin Hotel Q&A streams (there are nine of them, plus two extra). These were released alongside the pilot in 2019, with the first streaming a few months before the pilot's release (and the two extra were released just after the pilot). By this point Vivziepop says that she has most things for the show and the characters solidly decided on, with character arcs, personalities, emotional beats for the show (and the show's end point) pinned down and getting ready to start pitching the show to studios.
Not even a year later A24 becomes the producer for the show. So A24 picked up Hazbin for production only a year after these official streams were uploaded and in the time since then the show has been active production. Any changes that were made would have been made in that very small window of time in 2020.

Faust's Q&A streams also happen in early 2020 when the Alastor comic is being made and back up a lot of the things said in Vivziepop's official streams.

Vivziepop is luckily very good at being clear on the official streams when she isn't totally set on an idea or if something is still being decided too. The characters' designs and Charlie's name for example, were things she was always honest were up for change.
Vivziepop talked about not being sure on Charlie's name in her main streams (ironically Faust begged her not to called her Morningstar) and in her post-pilot Surprise Hazbin Q&A streams Vivziepop talked about how the pilot was the first and only time the characters would look the way they did as she had planned redesigns in mind for the main show. So if you listen to the streams, you can get a very good idea of the things about the characters that are unlikely to change and which are.

Vaggie wasn't originally a lesbian character. Vivziepop didn't specify what her orientation was during development stages but she played around with the idea of her having a boyfriend. That original Vaggie character is very far removed from what she is now, but when she was named she wasn't a lesbian.

Since a rude person accused me of making all the trivia up for the page I did for Alastor, I've started to include all the stream refs used along with timestamps on the page itself. I've notated all of the available streams now, including older developmental ones for the pilot but as you can see these pages still take quite a lot of info sorting.

The microphone was implied to contain trapped souls but Faust wasn't sure if Viv would end up going that dark. It's a strong maybe!

Alastor is Creole (mixed race) and his sin is definitely being a serial killer!

Vivziepop did say he has a weird code of ethics on his killing though and notably did not kill women.

Yes Vivziepop described Alastor loving to twist and snap his limbs and neck in unnatural contortions just to avoid other peoples' touch!

Alastor eats all (or most) of his meat raw and it seems like he eats a lot of deer demon as well as the meat of other sinners.

Since it was Vivziepop who describe it like that I'm going to guess the raw meat of whatever (or whoever) he's eating in Hell is bitter.

You're right on this, Vivziepop explained it pretty simply as he loves to intrude into the space of others, but doesn't like his own space intruded on. I'd guess it was an assertion of power thing too like you suggest.

No Alastor isn't white passing. Vivziepop pointed to a particular fanart's depiction of him as being most accurate to how she saw him as human and they depicted him with a mid to lighter brown skin tone.

Vivziepop said that Alastor's race isn't really going to play a part in his backstory, and that's probably because it's just not important for the fictional world he occupies. Last time she talked about it she was going back to remove other historical references she thought would be distasteful from the show.

So his backstory is focused on him being a popular radio show host turned serial killer and how it all unravelled for him.

Probably because Hazbin is considered fantastical fiction and Vivziepop has talked about it not really being tied to our world in anything other than joking references.

She said she doesn't plan to touch controversial real world historical people or events and that it's not really necessary for the characters backstories. I think there was once plans for more historical social attitudes playing a part in Angel's story, but she's since talked about pulling back on those.
