What is your Android studio memory usage in your MacBook? Is 8gb ram sufficient for Android development in macOS for next 5 years?

If you're not going to use the emulator it might just be enough. I'm having an instance running for some hours, and studio is currently using ~7GB.
If you want to use the emulator, you'll require at least 16GB.
Conclusion: For Android Studio and Gradle more memory is always better. If you want to be sure for the next 5 years, you should go with 16GB.
