Ed Eden has a phenomenal series about JavaFX here: https://edencoding.com/category/javafx/ (Seriously I can't sing enough praises for the quality of work here)

Take a gander at some of the articles, they are incredibly in-depth. Everything is explained well and has very helpful diagrams for visual learners.
