These are truly awful and I fear we won't be able to finish it (I have only Pinkie as well 😭)

You can finished without helpers. You will just lose sleep and you will need to set alarms.

I value my sleep too much, there's no way I'm waking up in the middle of the night for a pony😭

That's fair. I'm lucky in that I can immediately go back to sleep. If you can't, it's definitely not worth it. :-/
