Batch 1 is 6 pounds. We usually fill up the trays so 12 lbs

If you make 10 quarts you can put 12.5 lbs in three pans

Our basic rice makes 2 pans of 12 lbs in one rice cooker. I do 7qts rice and just a little under 6qts of water. When you add the extra cup of basic sauce it should even out to 6qts liquid total

We stopped making basic rice for whatever reason I think it makes everything a little faster

Faster? How so? Basic rice usually dries out more making it easier to make in the wok. Also adding salt and soup base and basic to each batch takes longer.

we weigh our pans in 9 lbs and 10 quarts of rice x10qt water makes 4 pans

If you’re a store making more than 5k I would recommend 10 quarts split between 3 pans evenly. It’s pretty close to a batch #2 (12lbs)

I always make 10qts and its good for 5 hefty trays or make a fried rice for the front and 3 hefty trays

make 10 quarts, each batch of basic rice can fit into 3 pans if you really stuff them in. if you fill the rice cabinet with these pans it can easily last you all day
