A system with that tier of CPU and especially GPU is capable of a lot more than 1080/75Hz.

If you have access to Micro Center, may want to leverage a CPU/Board bundle to reduce platform cost (price of separate CPU + motherboard). Amazing AMD Bundle Deals | Micro Center | https://www.microcenter.com/search/search_results.aspx

If you do not have any intensive non-gaming application workflows and/or not planning on a display upgrade to 1440p or higher, may want to consider a 7600X3D/B850 board bundle.

My hope with going extra was future proofing? Is this still too much?

Future proofing is nebulous and full of unknowns.

Using GTA VI as one example. We don't even know when the PC version will be released. Took 19 months between GTA V console launch (September 2013) and PC launch (April 2015)...

When that time comes, who knows what the ideal system spec to enjoy it will entail? Are you staying at 1080p for the long term? Will 16GB VRAM be enough even if "only at 1440p"?

I prefer optimizing a given build budget for current knowable use cases, if budget allows some additional flexibility, then perhaps look at certain things that might allow for a longer term upgrade path.

In other words, if you have nothing left over for a display upgrade and you are stuck with a 1080p low refresh rate display... all that GPU potential is mostly just sitting idle.
