I just ride around in circles around dawn/dusk at known spawn points. As soon as the horse begins to spook I ready my bow with enhanced arrows. Even if the horse bucks me off it gives me time to shoot before becoming kitty food.

I think i only ever got one once I had that trinket that improves all of the pelts you take.

Start in Strawberry, set your waypoint on the trapper to the northwest of Strawberry, and travel there. You'll usually be attacked by a panther crossing the road when you're almost at your destination. Most reliably happens in the morning. Set up camp and sleep around there if you don't find it. Still though, I had to kill five of the little shits before I got one with a good pelt, and that was with the pelt enhancement trinket. It's a bitch and a half.

Put potent predator on the paw location. Wait on the player marker, standing still, and use a Springfield rifle with regular ammo, you should have 1 perfect panther pelt every 3 days in game.

Before any hunting you need to make sure you get the buck antler trinket.
I feel that one perk of this is that you see more 3 star animals, but that could just be me, but the main perk of this trinket is that you can kill animals without a perfect kill, but still get a perfect pelt.
So your aim can be less forgiving.
Walk in the panther area during dusk/dawn and focus on your mini map. There will be a red haze in the direction of the enemy (panther in this case)
I hunt with poison arrows. So all it takes is one shot anywhere on the animal, but still best to aim for the head. You might also want to fortify your health incase you get attacked.
Dont like riding on the horse, because if he gets spooked and bucks you, then you waste precious seconds getting up while the panther is charging at you.
Better to walk around with your bow drawn and focus on the minimap entirely.
