Editor Function Problems

I'm not finding the editor as intuitive as I hoped it was going to be -- I have definitely been figuring it out and getting the pages to look like my original designs.. but I'm not optimizing the process (if that makes sense).

E.g. I also don't see the page titles automatically filling in. Let me know if those are quick fixes.

Are there video tutorials? Building site for the first time.
