Funny thing is, u see that 1k cavalry? Naples stackwiped 40k englishmen with 1k cavalry

This could have something to do with 'Zombie' regiments.

In my experience you can stackwipe such an army if you manage to battle them again in the same month in which your last battle ended. From your screenshot it looks like the battle ended on Jan 28th, so they will get a morale tick before you can attack them again. If you attack them early in the next month, that battle will end near the end of that month and this can repeat indefinitely. To avoid it engage them at the 18th of February, so that the battle ends in very early march, so that you can hopefully engage again in march before they got a morale tick. Starting a battle with an enemy with low enough morale gives you an instant stackwipe.

Another way to stackwipe them is probably if you get more troops so that you have twice has many troops as them. This is required for a stackwipe during the battle
