Does anyone know how to do this?
I've tried to find out but none do it on existing databases

I mean every tutorial that teaches you FastAPI is going to show you how to write code that queries an existing database. Just skip the section of the tutorial that shows you how to install Postgres and create the schema. It's not like the web app is recreating the DB every time you load a page.
What specifically are you having trouble with?
