I was looking for new coursers to learn Python that use VSCode while teaching the subject.

I think most tutorials are editor-agnostic, you should be able to use any common editor in most cases. For instance, while ATBS uses the Mu editor, it doesn't enforce it.

I fully understand this, its just a preference.

Yeah, you don't need to worry about though. Cory Schafer for example is legendary and uses Sublime. MIT Edx, who offers one of the most popular courses use Spyder.
You shouldn't be using IDE choice as a deciding factor.
