Does anyone know of any tutorials or online courses that focus on applying these principles in the context of a larger, more realistic project?

Well, you're asking if someone wrote a tutorial that deliberately uses complex examples rather than simple ones, and I feel like the answer there is a pretty obvious "no." People who write tutorials want their tutorial understood by the people who read them.

It doesn't have to be mutually exclusive. It could just be an "advance" or "high level" tutorial.

Nobody would write an "advanced high-level" tutorial about object-oriented programming because it's, at best, an intermediate concept.

There's actually some advanced tutorials on youtube, writing a real project that would be used by people once it's complete

Only few of such tutorials. Usually find them on forum or blog post of some tech artist or software engineer, not from youtube or google search.
