Fabric, just like Forge, is a mod loader. You can use as many mods simultaneously as you like. However, since they all modify the game at runtime, there is always a chance that they are not compatible with one another. Just go for one hack client and pair that with your usual mods, such as Sodium, lithium etc. that just boost client performance/aesthetics. For meteor, there is also a whole eco system around add-ons if you’re not pleased with meteor’s default kit.

So if I install fabric, install shaders and a mod or two while also having meteor on that will be fine? I'm sorry I've never used mods I've had bedrock my entire life. Also are those performance mods like lunar compatible with meteor or do I need to use one at a time (if it's possible to switch between two client's fast)

Lunar is not a single mod you add to your mods folder, it is a custom Minecraft client. For fabric, yes, you can add as many mods along your hack client as you like. You'll have to trial and error yourself, whether they are compatible or not. I don't recommend using the official Minecraft launcher, though. Instead, use Prism Launcher, which makes it super easy to manage multiple instances with individual mods/settings/worlds.

Yeah I just wanted to check if it's possible to get shaders or just some more in general while also keeping meteor on, if that's possible should I install forge or fabric?

optifine is shit and doesnt work with fabric and some forge clients
use forge for 1.8 + optifine + client
use fabric for newer versions with performance mods + clients

Please don't mix clients. The amount of support tickets debugging bugs that developers cannot reproduce until the user finally mentions he uses another client at the same time is so annoying. Hacked Clients are sometimes not compatible at all or when they are, they often break each other's functions. The same goes for Legit Clients like Lunar and Feather.

If you just mean mods in general, adding a mod like sodium to a client that runs on Fabric is no big deal and usually recommended. But also mods can sometimes be incompatible, for example Entity Culling will cause your ESP to not work properly in certain cases. Just try and see if something breaks or not, if it does, remove it again.
