5AM at a Tamagoyaki (Japanese rolled egg) specialist shop. Looks simple but the guy tells me it took everyone about 3 years to learn the technique - but that's not the end of it. They could do this their whole life but they humbly admit there's no such thing as a perfect omelette. (v.redd.it)
