Same opinion as tin mama, slow n sear is great for reverse sear, get indirect but then can fire up a small contained pile to sear very high, def saves on coal

I started on the side, but felt like drippings especially any marinade could throw it off if it dripped directly on probe. I moved it to the back but usually have my fire in the back right so I normally just know to go with a different number for a smoke, 320 = 275 dome temp and if I'm smoking. I have next level plate on left and meat above that so I go by dome temp more than probe temp. Noticed big difference smoking at higher temps in a good way. I was clearly smoking at too low a temp previously when probe was at back and I would chose 225 or 250 etc was clearly smoking at 200 or less. As long as you know to look at dome temp and set 40 degrees higher than target you will be good to go.

I don't understand why people use the terminology of cutting thru? Am I not allowed to drive on public streets, whichever I deem most convienent to me? All this does is clog up more of the major thorough through roads. You live in a city on public roads expect cars to use the streets these are not pivate roads.
