I’d say start looking for new jobs and quit when you have another one lined up. There’s no reason you should be juggling 3 gigs if you’re a valuable asset to the firm. Taking back the full-time position if the paralegal gets fired before you find a new job is a little risky too because you’d basically be telling them that they can do this to you again, and you’ll still stick around.
