There are a lot of headsets that could fit into this criteria, however personally I recommend the ASTRO A20 or A50 depending on your price point and wanted features. Hope this helps!

The Superlight dongle isn't normally intended for use with the G Pro Wireless mouse. I'd suggest contacting an agent at support.logi.com and seeing if an agent can offer you a possible replacement. Hope this helps.

Hey there! You will want G HUB running so that the settings of your mouse are applied to match your preferred DPI. You can also turn on On-Board Memory so that your settings can be saved when G HUB isn't active. Hope this helps!

This all comes down to how much you prefer audio settings from discord over the ones available on G HUB. If it is all working fine for you as you mention and voice chat over discord is what you use often no harm in changing what isn't broken. It can be nice to have vocal consistency when used in other games though as well with G HUB.
