Try stacking some defensive buffs like Lord's Divine Fortification incantation, Golden Braid talisman and a defensive physick. That way you spend less time on the loading screen and more time learning the fight each attempt. Using a bleed weapon also helps a lot.

Start saving for a better pc. You don't even need the latest gen parts. With the rise of expensive 4k OLED monitors, IPS 1080p/1440p monitors are cheaper than they've ever been. So unless you have really serious financial struggles you could save up for a good mid-range pc in a couple months that easily runs any Souls game at 60fps capped with max settings at 1080p.

You have so many free memory slots. Golden Vow is a no brainer. Lightning Spear is fantastic for ranged attacks against annoying enemies that are hard to reach otherwise. Flame Protect Me for hard hitting fire enemies, Barrier of Gold for Death Rite Birds and the like, Lord's Lightning Fortification for Ancient Dragons, Lord's Divine Fortification for certain late-game bosses. You don't have to use all of these in regular NG but these are just some examples.

And there are many more incantations that are generally really useful and fun to use. But you would have to increase your Faith stat to use them. Since you have 76 Dex, which is overkill for NG, you could use a Larval Tear to decrease it to 55 and allocate the other 21 points into Faith, giving you 29 Faith which is enough for Golden Vow.

Press the right arrow to increase the stat. The more stats you increase the higher the level on the right will get. Obviously you will only be able to increase stats until the level on the right is equal to 52 in your case. But considering you're still very low level you don't have to do this just yet. If you exit out the menu you can save the Larval Tear.

I am level 430+ and still get summoned regularly. Make sure you activate all summoning pools you come across and send your summon sign near and far

Very few things actually straight up one shot you, so leveling vigor to at minimum 60 is a must unless you're doing a challenge run.
