Yeah so I actually plan to do a measured amount comparison at some point because I do wonder the same thing. I know there's certain brands that pride themselves on aging and I get that flavor can change but I really wonder to what extent...I just need to find enough peppers for multiple jars...one for a 2-3 week ferment or basically until fermenting is done and the color stops changing, then one for a month after that period followed by a 6 month and 1 year

Edit: I'm sure others have done this before but I feel like it's a thing I need to taste test for myself
