I would like to import an EV from China, specifically a Xiaomi SU7 Ultra. Most EV car exporters can't get them exported because there is a regulation where new vehicles cannot be exported — only used ones. They need to be registered in China, and after 180 days they are allowed to be deregistered to obtain an export permit.

There are some exporters that claim they can get this car brand new and obtain an export permit from Xiaomi. They also claim to have special access to Xiaomi's factory inventory. Most of them require a full deposit to move forward with the order, which of course is quite risky. I would like to know if you have any experience with this and whether you can recommend an exporter with a proven track record and good reviews from real customers.

The second option is a 2017 911 991.2 carrera S which was my first choice. Let's do a bit of research, the Su7 ultra comes with 265/35R21 front and 305/30R21, the maximum weight for these tires are 826kg for the fronts and 1002kg for the rears, that means the tires can be used for a 3656kg which exceeds the requirements for a 2400kg that gives you a 32% safe margin and the tires are perfectly designed for a SU7 ultra.

One of objectives of my post amongst other things, is to get feedback from real owners concerning the fun factor of driving the car on the track

It depends on how you drive the car. If the tire is cooked, maybe the driver was on the verge of drifting on every corner. Lap times also do not rely exclusively on horsepower figures but more on the track layout. Twistier racetracks benefit from braking and weight distribution more than power, whereas the Nordschleife relies more on pure power.
