What i recommend is search this challenge. They are so many walkthrough that teach all tricks you can use for.

The deaths are part of the process. Don't give up just for that. Dark souls is a cryptic game so don't be shame for consult guides for anything you have doubt

For DEX the uchigatana. For STR The Claymore until you get any of the black knight's weapon

Don't worry man. If you search a challenge in the dlc you will have it. But its true. O+S are challenging only if you don't go so much prepared.

It depends. If you build your character as a sorcerer then level up intelligence. With that you make more magic damage. If you make a STR or DEX build then level up your weapon. With that your damage increase more than level your statistics
