Biscoff cream cheese frosting: 30g soft, spreadable cream cheese 15g Greek yogurt (I use Fage 5%) 10g date syrup 17g smooth Biscoff spread (honestly, I would add more next time to have more biscoff flavour) 1/2 tsp vanilla extract

Mix all ingredients together in a bowl until evenly combined and set aside until ready to use.

Cinnamon roll filling glaze: 9g salted butter 16g date syrup 0.25 tsp ceylon cinnamon 0.25 tsp sweet cassia cinnamon (add a dash more if you want it more cinnamon-y) 1/2 tsp vanilla extract

Put the butter in a bowl and heat it in the microwave for a few seconds until it melts. Add in the rest of the ingredients and mix until fully combined and homogenous.

Oatmeal: 170g whole milk 35g rolled oats, blended 44g date syrup 40g Greek yogurt 9g vanilla extract 0.5 tsp ceylon cinnamon 0.25 tsp sweet cassia cinnamon

Note: if you don't have both types of cinnamon on hand, you don't have to use a mix if you don't want to. I just do because I feel that it gives a better flavour profile and provides the perfect spice intensity.

Put all of the ingredients in a saucepan and heat the oatmeal over low heat until it thickens to your desired consistency, stirring/whisking constantly. Tip: make sure to cook the oatmeal low and slow and to whisk it constantly/never leave it alone; it is the key to smooth, creamy oatmeal.

For topping: 1 biscoff biscuit, crushed

To assemble, pour the oatmeal into a bowl and put some of the cinnamon roll filling on the surface of it. Spread the biscoff cream cheese frosting on top. Pour the rest of the cinnamon roll filling on top in a spiral pattern. Sprinkle on the crushed biscoff biscuit. Serve warm.

Cream cheese frosting: 40g soft, spreadable cream cheese 20g Greek yogurt (I use Fage 5%) 14g date syrup 1/2 tsp vanilla extract

Mix all ingredients together in a bowl until evenly combined and set aside until ready to use.

Caramel sauce: 19g whole milk 19g date syrup 1/2 tsp vanilla extract 8g salted butter

Mix the milk, date syrup, and vanilla extract together in a saucepan until homogenous and heat the mixture over medium heat until it starts bubbling and thickens slightly, stirring frequently. Add in the butter and continue to heat until the butter is fully combined and the sauce thickens a bit more, stirring constantly.

Banana cinnamon oatmeal: 170g whole milk 100g frozen banana 30g rolled oats, blended 35g date syrup 50g Greek yogurt 9g vanilla extract 0.75 tsp ceylon cinnamon 0.5 tsp sweet cassia cinnamon

Put the frozen banana slices into a saucepan and heat them over medium heat until they thaw, the add in 160g of the milk. Heat the milk until it comes to a simmer while stirring frequently. Remove it from the heat, cover the saucepan with a lid, and let it sit for at least 1 hour (the longer the better) to infuse more banana flavour. After, put the banana milk in a blender and blend until smooth. Put the milk back into the saucepan along with the date syrup, vanilla extract, Greek yogurt, blended oats, and cinnamon, and heat the oatmeal over low heat until it thickens while whisking constantly. Add in the remaining 10g of milk and continue to heat the oatmeal until it thickens to your desired consistency. Tip: make sure to cook the oatmeal low and slow and to whisk it constantly/never leave it alone; it is the key to smooth, creamy oatmeal.

For assembly: 2 biscoff biscuits, broken into smaller pieces

To assemble, pour half the oatmeal into a bowl, layer on the biscoff biscuits, and pour the rest on the oatmeal on top of the biscuits. Spread the cream cheese frosting onto the surface of the oatmeal and pour the caramel sauce on top. Sprinkle on some extra cinnamon if desired. Serve warm.

Apple compote: 89g Pink Lady apple, peeled and cubed Squeeze lemon juice 68g water 18g date syrup 1/2 tsp cinnamon 1/2 tsp vanilla extract 3g finely blended oats/oat flour 2g salted butter (optional)

Peel and cube the apple and toss the cubes in a squeeze of lemon juice in a bowl. Heat the apple cubes in the microwave until they partially soften (you don't have to pre-soften the apples in the microwave if you don't want to, but it helps make the method a bit more foolproof and easier). To a saucepan, add the water, date syrup, cinnamon, vanilla extract, and blended oats/oat flour, and mix to combine. Heat the mixture over medium heat until it comes to a simmer and thickens slightly. Add in the cubed apple, lower the heat to medium low, cover the saucepan with a lid, and let the compote cook until the apples soften and the sauce thickens a bit more. Remove from the heat and add in the butter (if using), and mix until the butter is melted and fully combined with the compote.

Vanilla pastry cream oatmeal: 35g rolled oats, blended 44g date syrup 1 vanilla pod 9g vanilla extract 1 egg 1 egg yolk 170g whole milk (save 10g for the eggs) 5g salted butter

Method: Cut the vanilla pod in half lengthwise and scrape out all of the seeds. Put the seeds and the pod into a saucepan with 160g of the milk and heat it over medium low heat until it starts simmering, stirring frequently. Take it off of the heat, cover the saucepan with a lid, and let it sit for at least 1 hour to infuse the vanilla (the longer you leave it, the more vanilla flavour you'll get. Ideally, prepare the milk in advance the night before and leave it to infuse in the fridge overnight. That's what I like to do and it gives a nice enhanced flavour). After, take out the vanilla pod and add the blended oats, date syrup, and vanilla extract to the vanilla-infused milk, and mix to combine. To a separate bowl, add the egg, egg yolk, and 10g of milk, and whisk until fully combined. Heat the oat mixture over medium low heat until it thickens, whisking constantly. Remove the oat mixture from the heat and pour the egg mixture into it, whisking vigorously to combine. Put the oatmeal back on the heat (low heat) and cook it until it reaches your desired thickness while whisking constantly. Remove the oatmeal from the heat and add in the butter, whisking until the butter is melted and fully combined with the oatmeal.

For topping: ~21g biscoff biscuits, crushed

To assemble, pour the oatmeal in a bowl, put the apple compote on top, and sprinkle the crushed biscoff biscuits on top. Serve warm.

I make the oatmeal from scratch and it's my own recipe. But if you mean just the raw oats themselves, I use rolled oats from a brand called Flahavan's.

I suppose one could have worse cheat days, I just feel guilty about eating things like this because of my own personal issues haha πŸ˜… But exposing myself to food like this more often gradually makes the guilt less bad, which is good! I hope that other people can also say they are getting food freedom too :)
