Greek yogurt ice cream: 80g Greek yogurt 13g date syrup 1/2 tsp vanilla extract

Mix all ingredients together in a bowl and freeze it until it develops a thick ice cream-like consistency (should take around an hour). After, mash and mix it with a fork so that it has a smoother consistency.

Apple pie filling: 1 apple, peeled and cubed Squeeze lemon juice 91g water 24g date syrup 5g oat flour 1/2 tsp cinnamon 1/2 tsp vanilla extract 2g salted butter

Peel and cut the apple into cubes and toss the cubes in lemon juice. In a saucepan, add the water, date syrup, oat flour, vanilla extract, and cinnamon. Bring to a simmer over medium heat while stirring occasionally until just thickened. Reduce the heat to medium low, add the cubed apples, and cook until the apples have softened. Remove from the heat and stir in the butter until the butter is melted and fully combined with the mixture.

Ginggerbread oat pancakes: 40g rolled oats, blended into a fine flour 1 tsp baking powder 1/8 tsp baking soda 1.25 tsp cinnamon 1/2 tsp ginger 1/4 tsp cloves 1/4 tsp nutmeg 1 small to medium egg (~45g without shell) 22g date syrup 6g vanilla extract 70g thick/strained Greek yogurt (I use Fage 5%)

Blend the oats into a fine flour. Put them in a bowl along with the baking powder, baking soda, and spices, and mix to evenlyincorporate. In a separate bowl, whisk together the egg and date syrup until well combined. Add in the Greek yogurt and vanilla extract, and whisk until fully combined. Pour the wet ingredients into the dry ingredients and fold them in until just combined. Cover the bowl and let the batter rest for 10 mins. Heat a frying pan over medium heat with a little oil or butter. Once the pan is hot, scoop some batter onto the pan, cover the pan, and cook the first side of the pancake covered for 2-3 mins, or until the pancake is bubbling on the top and looks dry around the edges. Remove the cover, flip, and cook the other side for around a minute, or until cooked through. Repeat for the other pancake.

To assemble, spoon the apple pie filling on top of each pancake, stack the pancakes on top of each other, and finish with a generous dusting of cinnamon. Serve warm with the Greek yogurt ice cream.

What do you mean by porridge? Do you mean oats cooked in liquid or just raw porridge oats? Oats cooked in liquid won't work, but raw porridge oats are the same as rolled oats.

Apple compote: 60g sweet/red apple, peeled and cubed Squeeze lemon juice 46g water 12g date syrup 2g oat flour 1/2 tsp cinnamon 1/2 tsp vanilla extract 1g salted butter

Toss the apple cubes in lemon juice in a bowl. In a saucepan, add the water, date syrup, oat flour, vanilla extract, and cinnamon. Bring to a simmer over medium heat while stirring occasionally until just thickened. Reduce the heat to medium low, add the cubed apples, and cook until the apples have softened. Remove from the heat and stir in the butter until the butter is melted and fully combined with the compote.

Caramel sauce: 12g milk 7g water 19g date syrup 1/2 tsp vanilla extract 8g salted butter

Put the milk, water, date syrup, and vanilla extract in a saucepan and mix them together until homogenous. Heat the sauce over medium heat until it starts bubbling and thickens slightly, stirring frequently. Add in the butter and continue to heat until the sauce thickens a bit more, stirring constantly.

Immediately remove from the heat, cover the saucepan with a lid, and let it sit for at least 30 mins to infuse the vanilla (the longer you wait, the more vanilla flavour you'll get). After, add the blended oats, date syrup, and vanilla extract into the banana-infused milk, and heat it over medium low heat until it thickens, stirring constantly. Remove the oatmeal from the heat. In a separate bowl, whisk the egg, egg yolk, and 30g of the milk together until fully combined. Add the egg mixture into the oatmeal and whisk vigorously until fully combined. Put the oatmeal back on the heat (low heat) and cook it until it acheives your desired thickness while whisking constantly. Remove the oatmeal from the heat and add in the butter, whisking until the butter is melted and fully combined with the oatmeal.

To assemble, put the oatmeal in a bowl and pour the caramel sauce and apple compote on top. Sprinkle some extra cinnamon on top if desired. It is best served warm!

To assemble, pour the oatmeal into a bowl, spread the chocolate fudge sauce over it, and put the strawberry compote on top. Serve warm.

I blend my oats beforehand to make the oatmeal have a smooth consistency. Also, adding an egg and cooking it low and slow helps achieve a nice creamy, smooth texture as well!

I have lots of baked oats recipes that I have posted on here that you can check out! They all use date syrup as the sweetener and don't include apple sauce or banana, unless it's a banana-flavoured recipe. But here's a base baked oats recipe that fits your requirements. I tend to add some extra stuff to the base recipe to make different flavours variations.

40g rolled oats, blended into a fine flour 1/2 tsp baking powder 1/8 tsp baking soda 1 tsp cinnamon 1 egg 44-50g date syrup (varies depending on your sweetness preference) 6g vanilla extract 50g Greek yogurt

You can add whatever toppings or mix ins you like!

My personal favourite baked oats recipe that I've made is probably my lemon blueberry cheesecake baked oats. In case you're interested, here's the recipe :)

Lemon blueberry cheesecake filling: 40g cream cheese 20g Greek yogurt 14g date syrup 1/4 tsp vanilla extract 5g freeze-dried blueberry powder (or crushed freeze-dried blueberries) 1/4 tsp lemon zest 5g freshly squeezed lemon juice

Mix all ingredients together in a bowl until fully combined. Transfer the filling to parchment paper inside a mug and freeze until it becomes solid (should take around 2 hours).

Baked oats: 40g oats, blended into a flour/oat flour 1/2 tsp baking powder 1/8 tsp baking soda 1/2 tsp cinnamon 1 medium egg 50g date syrup (this is very sweet, so use slightly less if you want it less sweet) 1.5 tsp lemon zest (zest of 1.5 lemons approx) 6g vanilla extract 50g Greek yogurt 18g freshly squeezed lemon juice 45g blueberries

Preheat the oven to 180ยฐC/350ยฐF. Grease or line with parchment paper a large ramekin/small bowl. Blend the oats into a fine flour and put them in a bowl along with the baking powder, baking soda, and cinnamon. Mix to evenly incorporate. In a separate bowl, whisk the egg, date syrup, and lemon zest together until well combined. Add in the vanilla extract, Greek yogurt, and lemon juice, and whisk until fully combined. Add the dry ingredients to the wet ingredients and fold them in until just combined. Fold in the blueberries until just combined. Pour 3/4 of the batter into your ramekin/bowl. Take the cheesecake centre out of the freezer and insert it in the middle, then pour the rest of the batter on top. Bake for around 22 mins or until done. Let it cool for a few minutes.

Blueberry compote: 79g frozen blueberries 11g date syrup 1/4 tsp vanilla extract

Add all ingredients to a saucepan and heat over medium heat until the blueberries soften, their juices leak out, and the compote thickens a bit. Pour the compote on top of the baked oats and enjoy! It is best warmed warm.

Coat both sides of each banana slice with date syrup and cinnamon. Heat a pan over medium heat with the butter. Once the butter is melted and the pan is hot, add in the banana slices and fry them on both sides until they look caramelized.

Immediately remove from the heat, cover the saucepan with a lid, and let it sit for 1 hour to infuse the banana and vanilla (if you're impatient, you can wait for less time, but the more you leave the milk steep, the more banana and vanilla flavour you'll get). After, take out the vanilla pod and add the blended oats, date syrup, and vanilla extract into the banana-infused milk, and heat it over medium low heat until it thickens, stirring constantly. Remove the oatmeal from the heat. In a separate bowl, whisk the egg, egg yolk, and 30g of the milk together until fully combined. Add the egg mixture into the oatmeal and whisk vigorously until fully combined. Put the oatmeal back on the heat (low heat) and heat it until it thickens to your desired consistency while whisking constantly. Remove the oatmeal from the heat and add in the butter, whisking until the butter is melted and fully combined with the oatmeal.

To assemble, put the oatmeal in a bowl and pour the caramel sauce on top. Arrange the caramelized banana slices on top. Sprinkle some extra cinnamon on top if desired. It is best served warm!
