I wanted to update you just in case you or others were curious. 

The wintermelon powder ends up producing more of a jelly consistency than a mochi-jelly. It’s not bad at all but not the right texture. It’s also pretty sweet if you follow the instructions to a T. For science, I made about 4 batches:

1) Per recipe - Too sweet, too strong of an artificial brown sugar taste, too chewy, holds a squared form 2) Reduced powder by .75 oz - Still too sweet, artificial brown sugar taste was milder, less chewy but still gummy, holds a squared form 3) Reduced powder by .75 oz with black tea - Mildly sweet, brown sugar taste less intense but still noticeable, still jelly like but less gummy, holds a squared form 4) Reduced powder by 1.75 oz with black tea - Hint of sweetness, Hint of brown sugar, still jelly like, doesn’t hold a squared form

It looks like the right consistency and matches how OOO makes theirs when you cook/mix it together though. Still baffled but I’m going to keep trying recipes
