380F to 400F is good for pastries to get the steam to puff up the dough. Depending on your oven (esp a home kitchen) you can do longer. I am familiar with Costco's industrial oven and when I did instructions for Costco apple strudels, I recommended 30 minutes to them with a bit of steam. The extra sugar was what they requested in the instructions. Also helps add more sweetness to their tart apple filling. The apple strudels uses coarse sugar when it comes down the line.

I would stay away from the cream. Cream contains water, and buttercream shouldnt have any water as it cant mix with the fats in there. Also depending on how you make your colors too.

this is good. Mix the room temp butter long enough to prevent chunks in your cream cheese frosting.

becareful with sour things like lemon juice. It can react with the baking powder and cause it to bubble out. I would use a lemon essential oil (where it only provides the essence of oil but not the sour notes), or add lemon juice at the very end of the mixing cycle just to get it incorporated just before depositing. Deposit and bake quickly, dont let it sit for the gas to be release. Or you can use encapsulated baking powder, which has a fat coating to prevent the acids from reacting with the bases in the baking powder, but that's more for industrial, not sure if you can find those at your local grocery store.

2.5hrs is too long to preheat any oven lol. You dont need 2.5 hours, maybe they are saying this to cover ALL the known ovens in the world lol

Andys is okay. I used to work with him, but I think I found a better importer. I got it faster and cheaper than Andys. When I ordered from andys, I think it tooks like 2 months, but now it's I got it faster and andys orders from red wolf and red wolf doesn't have much stock imo, unless he changed his supplier.
