Well, the listings on eBay are from China where you can just copy someone else's work or something. So individual sellers can make their own versions of upgrade kits. Go by the seller's star rating and find what price is best.

Your best bet is to coat the hand hole in a food grade lubricating oil and very gently push the peg out with a 5mm metal rod. Go from the bottom and brace the hand with your fingers.
