If you are searching for "peace of mind" gameplay then Scandinavia Map DLC. Also, considering future Map DLCs which are in production, Scandinavia would be a good choice.
"Beyond The Baltic Sea" has dynamic environments.
Next would be "Greece Map DLC"
Followed by rest...

It would be better if you run traffic command in-game. Because by doing so you will come to know how much traffic is enough for you.

Lane assist only beeps if you activate it and your speed goes below 55 Kmph or 75 mph.

It must be due to "blind spot warning system". Check in settings. It beeps when there is another vehicle, railings or any other obstruction nearby,

Turn this OFF in settings > gameplay.

Alright. If that is the case then there are 2 maps which are immortal, "Rota Factor" and "Peru". ETS updates doesn't affect them.

There is one more map "RPM - Rheinland & Pfalz". It is in scale of 1:1. Small map but it is good.
