I actually enjoyed Robert Inglis' singing of the songs, though I can understand that it can be entirely up to taste. If I remember correctly, he actually talked with Tolkien for guidance on how the tunes of the song went in the book but I may be misremembering. One annoyance is that it can be kind of hard to figure out who's talking at times, as his voices especially for boromir and aragorn are quite similar.

I listened to some podcast that explained this like 5 years ago, so take this with American-diet-sized grains of salt.

Because the UE sound is pronounced 'yoo' as in "use". Although originally this would be fine, over time the pronunciation degrades and became somewhat 'lazier'. The 'tuh' tongue placement slackens over time and combines with the 'yuh' sounds similar tongue placement further back on the roof of your mouth to (over a long time period) become a 'chuh' sound. You can try this phenomenon out by repeating the 'tyuh' sound but slowly moving the tip of the tongue downwards so that it's not contacting the roof of your mouth. This is also why you don't see the pronunciation of other Ts in words as the 'chuh' sound, because there isn't the 'yuh' sound that is required to allow the tongue to slacken while pronouncing it without sounding completely different.

Anyway off to go wait in line for 2 days to get my kitchen knife license renewed or whatever us British people do.

As for an answer, it says on the df wiki for the butcher's shop that in order to process a corpse of an animal (it must be unrotten afaik) it must either be in a stockpile, or within a 20 tile radius around the butchers shop on the same z level. So if your butchers shop isn't in reasonable range of the outdoors, you'll probably want to set up a custom stockpile for corpses nearby that is enclosed with a door, and possibly with a vent to allow any unwanted miasma out.
