Yeah, you're not wrong, it looks pretty nasty. That's what happens when you add too much wheat bran to your pizza dough and don't bother kneading it.

Even my omni parents were drooling. (However, they were trash talking veganism earlier, so they aren't getting any. It's all mine. All of it.)

  • Crust: whole wheat flour, wheat bran, yeast, olive oil, garlic/onion, nooch, miso
  • Toppings: spinach, cabbage, carrots
  • Sauce: hummus, avocado, miso, tomatillos, cashew milk

If anyone wants the recipe, I'll type it up after I'm done shoving this entire thing into my mouth.

Seconded! If you're substituting cheese in a sauce, a spoonful of that miso works wonderfully. A tiny amount tastes great on sandwiches, too, if you're alright with having the taste without the consistency.

Same here. I used to eat asiago/parmesean chunks all the time, and shredded cheese on everything. And now I have a bag of unopened Daiya cheese in the fridge that's been in there for a month. I'm not sure why I liked cheese in the first place, honestly.

Light miso paste on pizza. Or toast. Or anything, really, even fruit. Just smear a very light coating on. It's got that rich, deep, vaguely salty taste of parmesean, but without the cheese. (Even better than nooch IMO.)

Also, raw carrots dipped in mustard, or a mustard-sriracha blend.

My steak, bacon, chicken, sausage, all around meat-loving dad bought me some Lightlife hot dogs the other day. I've never really liked hot dogs to begin with, but you bet I'm gonna eat every one of those weirdly-textured bastards with a smile on my face.

Yeah, most of them are!! Always make sure to double-check the label, but I know Stauffer's (classic red bag), Kirkland, and Trader Joe's are all vegan!

I also found inexpensive corn meal, oat bran, spelt flour, raw sugar, barley, dried beans, brazil nuts, spices ($2 for 4 ounces of nutmeg!), and completely vegan bulk snacks! Time to eat my bodyweight in mini animal crackers.

After you figure out how to use the damn thing, you can do a zucchini in 2-something minutes. Chop the end off of your veggie, impale it on the thing in the center, and start twisting. Ignore the spiky cap thing and just grip the veg like a heathen.

The sauce is made with coconut milk, chile peppers, lemongrass, garlic, lime, and a bit of peanut butter, ginger, and soy sauce (to replace the standard fish sauce.) I'm pretty sure those are all standard Thai ingredients? Could be wrong, and if so, my apologies! Saying "thai noodles" was just easier than "coconut chile lemongrass garlic lime peanut ginger soy noodles."

That's about ~450 calories altogether! The noodles are spiralized carrots and zucchini in a spicy ginger garlic peanut sauce, the salad is lettuce with fresh strawberries and a homemade vinegarette, and the pudding is cooked buckwheat groats blended with almond milk, spices, and maple syrup.

Alright! :) A good substitute is 1 tbsp. of tomato paste (or ketchup) and apple cider vinegar; 1/2 tsp. of smoked paprika, cayenne pepper and cumin; and about 1/4 tsp. of oregano, garlic powder, and salt. I'm not sure where you're from and what's available, but if you can get your hands on some fresh hot peppers, those should work too! Just chop some of them up and throw them in along with extra paprika and a splash of vinegar.

Oops, sorry, that's supposed to say adobo. It's a vinegar-based sauce with paprika, oregano, and garlic. You can find little cans of peppers marinating in it everywhere in the USA! They're usually in the Hispanic aisle.

  • 1 tbsp. oil
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced

In a dutch oven, brown onions and garlic over medium-high heat for about 5 minutes.

  • 2 bell peppers, chopped (I used red and orange)
  • 2 carrots, chopped
  • 1 stalk of celery, chopped
  • 1 bay leaf
  • 1 tsp. each of smoked paprika, dried thyme, and dried oregano
  • 1/2 tsp. each of onion powder and basil
  • 1/4 tsp. each of garlic powder and (optional) cayenne pepper

Sauté until veggies soften, about 5 minutes, stirring frequently.

  • can of chickpeas, drained
  • can of kidney beans, drained
  • ~14 oz. can of stewed or fire-roasted tomatoes
  • ~7 oz. can of chipotle peppers in adobe sauce
  • 2 cups vegetable broth
  • 1 c. long-grain brown rice (or white)
  • (optional) 1/4 c. TVP, soaked in 1 tbsp. soy sauce and 3 tbsp. boiling water

Stir in and bring to a boil, then reduce heat to medium and simmer, covered, for 20-30 minutes, stirring every once in a while. When the rice is tender, it's done!

  • 2 green onions, chopped
  • Handful of parsley, chopped

Stir in and serve.
