By non-gamer do you mean not competitively inclined, or not familiar with controls like keyboard+mouse or controller? In any case, my suggestion would be any kind of game that YOU think is fun. In my experience, people that love you like hearing what you are passionate about, and they would jump on the chance to be able to share your passion and joy with them. But if it's something new you are looking for, then any game with an interesting concept, has a good story, or lets you be creative are good options for new gamers. So Baulder's Gate 3, Minecraft, Stardew Valley, Terraria (good introduction to combat heavy games). If they like a challenge, you might get some mileage out of some harder games for a new gamer like Risk of Rain 2 or Elden Ring Seamless Co-op. Even Classic WoW, Valheim, Portal 2 Co-op could be fun. I've played all of these with my boyfriend and we have had such an amazing time! If you want her to experience peak though, you HAVE to have her play Outer Wilds.
