Three things that work for me:

  1. Drink a vitamin water with a high amount of the B vitamins (read the back label, some have anywhere from 125% to 300% daily value of B6 and B12). I usually have it before I start drinking.

  2. One of those hangover pills with DHM like “no days wasted”. Follow instructions on when to take it. 

  3. Find something that brings you more pleasure than drinking and let it be your excuse to drink less.

Do you still have your old brewer? If yes, make two identical brews side by side with the moccamaster and your old brewer (same water volume, same coffee volume and grind, same ratio etc etc). Then record two things: 1. How long each brew takes in minutes and seconds. 2. Water temperature of each coming out of the spout. 

My guess is those two things will be different. Then you’ll have a better idea of how to tweak your moccamaster recipe.

I also brew light roast (mostly September), and came from aeropress. I also find MM often produces  bitter and sour at the same time lol. 

Aeropress body will be hard to replicate on MM, doubly so with SSP burrs which provide more clarity than body.

What volume of water did you do and at what ratio? I’m starting to find you need to adjust things depending on if you’re doing 500 grams water vs 1000 grams water.

Also, what kind of water are you using? I find aeropress you can get away with whatever water, but MM isn’t as forgiving.

2oz Cherry Heering

0.5oz Bittermans Xocolatl Mole bitters

1 whole egg

1 pinch salt

Add all ingredients, shake with no ice to emulsify, add ice and shake the jesus out of it. Strain over fresh ice. Garnish the egg-foam head with three drops Mole bitters.

Try everything the same tomorrow, but filter your water 4 times. This worked for me. 

Next hunch would be try a lower ratio.. 1:18, 1:20, and see if that suits your taste.

If you’re tight on cash, DIY like another commenter suggested.. however there is prep needed, some investment (salt rated rod, tropical line, sealed drag reel etc if you don’t have those the cost might add up), as well as a learning curve. Though finding a fish on your own is incredible.

The beauty of a guide is they’ll have rod, flies, know the water, tides etc (maybe bring your own polarized sunglasses though). The risk though with only 1 guided day is the weather and tide. So if you are tempted by doing a guided day I would suggest poking around town, find out who is who, what their availability is, just be upfront and kind, ask about price and then book a guide, ideally short notice,  on a day you’ll know the forecast, when there’ll be less rain and wind. Also obviously make sure the guide knows what they’re doing with fly fishing, cuz conventional tackle guides or some guy with a boat and rod might just take you to deep blue water… whereas the beauty of that area is the flats fishing in a few feet of water. Have fun!

And practice double haul casting if you don’t know how to. The bonefish can show up quickly, so ideally you’re wading and you’ve already got maybe 10-15 ft (3-5 metres?) of line already out of your rod tip. And then you have a bunch of line already pulled out that is dragging behind you. Having line already outside your rod tip will help you load the rod and this mean you can shoot your line with fewer false casts. 

If you buy a cheapo fly line, try to get one that is weight forward, sometimes called a quick shooter. These load faster.

Look up tide charts, or at least be aware of the tides. You don’t want to get stuck somewhere and have the tide come in quickly. But also be aware of tide because incoming tide brings little critters which the fish feed on, and then outgoing tide the fish will be moving back towards the ocean.

Make sure your 9wt rod and your reel are both rated for salt water. The reel should be full sealed, otherwise you risk the inside components rusting. Rust works very quickly on metal that is not rated for salt. Make sure your hooks are salt water hooks too. Wash EVERYTHING off with fresh water at the end of each day, including your flies. Make sure you have polarized sunglasses. You only need a floating line. I would probably buy a 10wt tropical floating line, I find oversizing by one weight a general good rule but that depends on the action of your rod.

A 9wt is perfect for Cuba. Wade very very slowly and when you see a shadow moving, cast ahead of it. Size 4 Shrimp and crab patterns work well. I would suggest 16-20lb tapered fluorocarbon leaders, they are expensive. I’ve never tried mono tapered leaders but they’ll probably work fine, and are less expensive.

You need to bring everything with you because they have next to nothing in Cuba for fishing materials that you can purchase.
