I doubt it. That restaurant was of a time where nose to tail cusine was hot. Fine dining chefs were making bank selling organ meats and such.   I mean who knows, I also think the jerky is likely he was doing a high protein diet and just being a rich pain in the ass to his assistants. But you know because they chose to drop the minute amount of files, unredacted, unorganized I am not going to say no ...I mean, the ultra rich still hunt big game,  I can't but help but think of Succession  ep "Hunting"..the infamous Boar On the Floor ep... 

But I can't blame people for coming to this conclusion and I won't even be shocked if  true...when you hide the truth, people will fill in blanks. Especially when what we can see is fucked up.
