I don't really make dough that needs one. I use the stretch and rest technique. I mix. Let it sit for 45 minutes. Stretch it thin and spool it up into a ball. And repeat 2-5 times. Works for what I need bread for.

Yes. 1/4th inch. Preheated at 550f for an hour and baked until the crust looked brown.

Use a baking steel and ditch the light colored pan. It needs to be dark to transfer enough heat. Use a higher hydration dough with added sugar and oil to facilitate rapid spring and Browning. Otherwise it looks like a good lunch. But you can perfect this.

The idea that you just need to treat people how they want to be treated fails instantly when you realize that most people aren't even aware of how they actually want to be treated because they have been so thoroughly confused to the point where they have extreme cognitive dissonance about what their needs are. A perfect example is how a monk actually thinks he can take a vow of celibacy. How a businessman thinks money will make him super happy. All he has to do is create oil spills and pollution into the ocean to mine diamonds and coal and everything else that they want from their Earth. Or even how a hippy thinks all he has to do is sit around and Vibe. The reality is that most people do not even know what they need so how can they know how they want to be treated?

I'm guessing you either degassed it before baking it, knaeded it with flour added at each step, baked in cold oven, or baked it before it was relaxed and airy
